- 🥩 300g sliced beef
Vegetables
- 🥔 1 medium potato (150g), diced
- 🥕 1/2 carrot (75g), chopped
- 🥬 200g cabbage, chopped
- 🧅 1/2 onion (100g), sliced
- 🧄 1 clove garlic, crushed
- 230g canned beets
- 150cc beet juice from can
- 🍅 200g canned whole tomatoes
Condiments
- 1 tbsp olive oil
- 🧈 20g salted butter
- 🧂 1/2 tsp salt
- Pinch of black pepper
- 1 bay leaf
- 1 tsp consomme
Garnish
- 🌿 Chopped parsley, as needed
- Sour cream, as needed
ÉTAPES
Dice the potato, chop the carrot, slice the onion, and crush the garlic. Chop the cabbage into bite-sized pieces.
Heat butter and olive oil in a pot over medium heat. Add garlic and beef, cooking until the beef changes color.
Add potato, carrot, cabbage, and onion to the pot. Stir until coated with oil. Add water, beets, beet juice, tomatoes, salt, black pepper, consomme, and bay leaf. Cover and simmer for 15 minutes.
Serve in bowls, garnish with parsley, and top with sour cream.
