    • 1 tbsp soybean paste
    • 🧄 1 tbsp minced garlic
    • 0.5 tbsp minced ginger
    • 🧂 0.3 tbsp coarse salt
    • 6 tbsp cooking wine
    • 10 turns black pepper

Mix soy sauce, chili powder, sugar, oyster sauce, vinegar, soybean paste, garlic, ginger, coarse salt, and black pepper to create the seasoning sauce.

Soak the cleaned mackerel in rice water with 1 tbsp vinegar for 20 minutes.

Slice the radish into 1 cm thick pieces and cut into quarters.

Prepare green onion, chili peppers, and onion by slicing them into bite-sized pieces.

Layer the radish at the bottom of a pot, add rice water, 2 tbsp of seasoning sauce, and 1 liter of water. Boil on high heat.

Once boiling, cover the pot and simmer for 15 minutes.

Add the mackerel on top of the radish and spread 2/3 of the remaining seasoning sauce over the fish.

Add onion, green onion, chili peppers, and cooking wine. Ladle the broth over the fish for 5 minutes.

Cover and cook on high heat for 10 minutes.

Taste the broth and adjust seasoning with the remaining sauce if needed. Reduce the broth until slightly thickened.
