Cut the pork belly into 2cm wide pieces.

Heat salad oil in a frying pan over medium heat. Add pork belly and cook until both sides are browned, flipping occasionally. Remove excess fat with a paper towel, add ginger and water, and bring to a boil. Skim off any foam, cover, and simmer on low heat for 30 minutes.

Add the seasoning ingredients (sake, mirin, sugar, soy sauce), place a drop lid, and simmer on low heat for another 30 minutes. Increase to medium heat and cook for 5 minutes until the sauce thickens.

Turn off the heat, add soft-boiled eggs, and let them soak in the sauce for 5 minutes, occasionally flipping them.

Serve on a plate and garnish with thinly sliced green onion.
