INGRÉDIENTS
Meat
- 800g pork belly block
Egg
- 🥚 4 boiled eggs
Vegetables
- 🧅 1 stalk green onion (green part)
- 3 slices ginger
Cooking Liquids
- 400cc cooking broth
Oil
- 1 tsp salad oil
Seasoning
- 100cc sake
- 🍬 3 tbsp sugar
- 80cc soy sauce
- 🍯 1 tbsp honey
ÉTAPES
Cut the pork belly into 4–5 cm wide pieces.
Heat salad oil in a pot over medium heat and sear the pork on all sides until browned. Add enough water to cover the pork, along with green onion and ginger. Bring to a simmer, skim off any foam, and cook on low heat for 30 minutes.
Separate the pork from the broth. Cool the broth and remove the solidified fat.
Return the pork and broth to the pot. Add sake, sugar, soy sauce, and honey. Mix well and heat over medium heat. Once boiling, reduce to low heat, cover with a drop lid, and simmer for 40 minutes.
Turn off the heat, add boiled eggs, cover with the drop lid, and let sit for 20 minutes.
