- 825g pork shoulder
Seasoning
- 🧂 A pinch of salt
- A pinch of pepper
- 2/3 cup soy sauce
- 🍬 1/2 cup sugar
- 3 tbsp mirin
- 2 tbsp corn syrup
- 2 tbsp plum extract
- 3 slices of ginger
- 💧 1 cup water
- 3 bay leaves
ÉTAPES
Season the pork shoulder with salt and pepper and let it sit.
Combine water, soy sauce, sugar, mirin, corn syrup, plum extract, and ginger slices in a pot.
Add bay leaves to the mixture. If available, add star anise for extra aroma.
Place the pork shoulder in a stainless steel pot and simmer on low heat for 40 minutes.
After 20 minutes, flip the pork shoulder to ensure even cooking and continue simmering for another 20 minutes.
Let the pork cool slightly before slicing for better texture and presentation.
