INGRÉDIENTS
Fish
- 🐟 400g yellowtail (fish scraps)
Vegetables
- 🥬 300g daikon radish
- 1 piece ginger
Seasonings
- 🧂 1 tsp salt
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 300ml water
ÉTAPES
Sprinkle salt on the yellowtail and let it sit for 10 minutes. Rinse with hot water, then wash under cold water and pat dry.
Cut the daikon radish into 2cm thick slices and slice the ginger thinly. Reserve some ginger for garnish.
Place the yellowtail, daikon, sliced ginger, and seasonings into a pressure cooker. Cook on medium heat until pressure builds, then reduce to low heat and cook for 10 minutes. Let the pressure release naturally.
Remove the yellowtail and daikon, then boil the remaining sauce on high heat for 3 minutes to thicken.
Serve the yellowtail and daikon on a plate, drizzle with the thickened sauce, and garnish with julienned ginger.
