INGRÉDIENTS
Fish
- 🐟 2 slices yellowtail fillet
Vegetables
- 🥒 1/3 daikon radish, chopped
- 6 slices ginger
- 🧅 1 green onion, cut into 3-4 cm pieces
Oil & Spices
- 1 tbsp salad oil
- 2 tsp sansho powder
- Shredded ginger for garnish
Seasoning
- 450 ml dashi stock
- 2 tbsp sake
- 2 tbsp mirin
- 🍬 1 tbsp sugar
- 3 tbsp soy sauce
ÉTAPES
Cut the yellowtail fillets in half. Chop the green onion into 3-4 cm pieces and cut the daikon into irregular chunks.
Place the daikon in a microwave-safe container, sprinkle with 1 tbsp water, cover loosely with plastic wrap, and microwave at 500W for 3 minutes.
Heat salad oil in a frying pan, add the yellowtail and daikon, and cook over medium-high heat until both sides are lightly browned.
Remove excess oil with a paper towel, add the dashi stock, sake, mirin, sugar, soy sauce, and ginger slices. Cover with a drop lid and simmer over medium-high heat for 10 minutes.
Remove the drop lid, add sansho powder and green onion, and simmer for another 5 minutes. Plate and garnish with shredded ginger.
