INGRÉDIENTS
Fish
- 2 fillets (160g) buri
Egg
- 🥚 1 boiled egg
Vegetable
- 30g minced takuwan
- 70g mizuna (cut into 4cm pieces)
Starch
- Potato starch as needed
Oil
- Salad oil as needed
Tartare Sauce
- 3 tbsp mayonnaise
- 🧂 Salt and pepper to taste
- 1/2 tbsp vinegar
Marinade
- 1 tbsp sake
- 1 tsp soy sauce
- 1/2 tsp grated ginger
ÉTAPES
Freeze buri fillets in a freezer bag for 45 minutes using quick freeze or regular freezing.
Mince the takuwan into small pieces.
Mash the boiled egg in a bowl with a fork, then mix in minced takuwan and tartare sauce ingredients.
Defrost the frozen buri in the refrigerator, pat dry, and cut into 3-4 pieces. Marinate in the mixture of sake, soy sauce, and ginger for 10 minutes.
Coat the marinated buri pieces with potato starch. Heat salad oil in a pan to about 1cm depth and fry the buri until golden brown, about 3-4 minutes.
Plate the fried buri with mizuna and drizzle the tartare sauce generously on top.
