    • 2 tsp of olive oil
    • 2 tbsp of mayonnaise
    • 🧂 A pinch of salt
    • 2 tbsp of potato starch

Cut the potatoes into bite-sized pieces and soak them in water. Drain the water.

Place the potatoes in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 8 minutes. Mash while hot and mix with mayonnaise, salt, and potato starch.

Cut the bacon into 5mm strips. Lay them on a baking sheet lined with aluminum foil, sprinkle with black pepper, and toast for about 5 minutes until browned.

Slice the Camembert cheese horizontally into two halves. Place one half cut-side up, layer the bacon on top, and cover with the other half cut-side down.

Spread half of the mashed potatoes on plastic wrap, making it about 3cm larger than the cheese. Place the cheese on top and wrap it. Cover with the remaining mashed potatoes and shape using the wrap.

Brush a baking sheet lined with aluminum foil with 1 tsp of olive oil. Place the wrapped cheese on it, brush with the remaining oil, and bake in a toaster for 5–7 minutes until golden brown. Garnish with watercress.
