Main
- 100g ground chicken
- 🍄 2 shiitake mushrooms
- 🥚 2 eggs
- Mitsuba, as needed
Mushroom Sauce
- 1 tsp mirin
- 1 tsp soy sauce
- 1/2 tsp dashi powder
- 1/2 tsp grated ginger
- 💧 100ml water
Egg Mixture
- 💧 200ml water
- 1 tsp sake
- 1 tsp soy sauce
- 1 tsp mirin
- 1/2 tsp dashi powder
Thickening Agent
- 1 tsp potato starch
- 💧 1 tsp water
ÉTAPES
Slice the shiitake mushrooms thinly and cut mitsuba into bite-sized pieces.
In a pot, mix the mushroom sauce ingredients and ground chicken. Heat over medium-low until boiling, skim off foam, then add shiitake mushrooms. Cook for 2–3 minutes until softened and chicken is cooked. Add the thickening agent to create the mushroom sauce.
In a bowl, beat the eggs gently without creating bubbles. Add the egg mixture ingredients and mix well.
Pour the strained egg mixture into heatproof bowls.
Place the bowls in a pot with water reaching 1/3 of the bowl height. Bring the water to a boil, then turn off the heat and cover the pot.
Steam over low heat for about 15 minutes until the surface turns opaque. Top with mushroom sauce and garnish with mitsuba.
