INGRÉDIENTS
Protein
- 🍗 250g chicken thigh
Vegetables
- 90g burdock root
- 🌱 50g frozen edamame
Seasoning
- 🧂 Pinch of salt and pepper
- 3 tbsp potato starch
- Adequate amount of salad oil
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1.5 tbsp soy sauce
ÉTAPES
Peel the burdock root with the back of a knife and slice it thinly at an angle. Soak in water for 5 minutes, drain, and pat dry. Coat with 1 tbsp potato starch. Defrost edamame and remove beans from pods.
Cut chicken into bite-sized pieces and season with salt and pepper. Coat with 2 tbsp potato starch.
Heat 3cm of salad oil in a frying pan to 170°C. Fry burdock until golden brown for about 3 minutes, then remove. Fry chicken until cooked through and golden brown for about 5 minutes, then remove.
In a separate pan, heat sake, mirin, sugar, and soy sauce over medium heat until boiling. Add fried chicken, burdock, and edamame, and coat evenly.
