INGRÉDIENTS
Main Ingredients
- 🍗 1 piece (250g) chicken breast
- 1/2 burdock root (90g)
Coating
- 1 tbsp potato starch
Cooking Oil
- 1 tbsp salad oil
Garnish
- 1 tsp white sesame seeds
Seasoning
- 💧 150cc water
- 1 tbsp sake
- 2 tbsp mirin
- 🧂 1 tbsp sugar
- 2 tbsp soy sauce
ÉTAPES
Slice the burdock root diagonally into 5mm pieces and soak in water for 5 minutes to remove bitterness. Drain and pat dry.
Cut the chicken breast into bite-sized pieces and coat with potato starch.
Heat salad oil in a frying pan over medium heat and stir-fry the burdock for 2–3 minutes.
Push the burdock to one side of the pan, add the chicken pieces, and cook for 1–2 minutes until browned.
Flip the chicken pieces, add the seasoning ingredients (water, sake, mirin, sugar, soy sauce), and mix well. Bring to a boil.
Cover the pan and simmer on low heat for 6–7 minutes.
Remove the lid and reduce the sauce until it thickens and coats the ingredients.
Plate the dish and sprinkle with white sesame seeds before serving.
