INGRÉDIENTS
Protein
- 🍗 200g chicken breast (no tendons)
Vegetables
- 60g burdock root, julienned
- 🧅 10cm green onion, minced
Cooking Oil
- 1/2 tbsp salad oil
Seasoning for Meat Mixture
- 1/2 tsp grated ginger
- 1 tbsp sake
- 🧂 1/4 tsp salt
- 1 tbsp potato starch
Sauce Ingredients
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
ÉTAPES
Peel the burdock root using the back of a knife, slice diagonally, julienne, and soak in water. Drain well. Mince the green onion.
Chop the chicken breast roughly and then mince it using a knife.
In a bowl, combine minced chicken, burdock, green onion, and the ☆ seasonings. Mix until sticky and divide into 6 portions. Shape into flat round patties.
Heat salad oil in a frying pan over medium heat. Add the patties and cook until browned. Flip, cover with a lid, and cook on low heat for about 6 minutes.
Remove the lid, add the ★ sauce ingredients, and coat the patties by flipping them. Cook on medium heat until the sauce thickens and evaporates.
