    • 1 tbsp miso
    • 1.5 tbsp soy sauce

Cut the carrot lengthwise, then slice diagonally into bite-sized pieces. Slice the lotus root into 5mm thick pieces and quarter them. Cut the chicken into bite-sized pieces.

Heat salad oil in a pot over medium heat. Add chicken and sauté until the color changes. Add carrot and lotus root, stirring until coated with oil.

Add sake and water, bringing to a boil. Skim off any foam or impurities.

Add sugar and mirin, cover with a lid, and simmer on low heat for 10 minutes. Dissolve miso and add soy sauce, stirring to combine. Cover and simmer for another 5 minutes.

Add white sesame seeds and simmer until the sauce thickens and reduces.
