Main Ingredients
- 🍗 1 piece (250g) chicken thigh
- 200g lotus root
- 🍑 2 plums
Cooking Oil
- 1/2 tbsp salad oil
Seasonings
- 1 tbsp sake
- 2 tbsp mirin
- 🧂 1 tsp soy sauce
- 1/4 tsp Japanese dashi powder
- 💧 100cc water
Garnish
- 3 shiso leaves
ÉTAPES
Cut the lotus root into bite-sized pieces and soak in water to remove excess starch. Slice the shiso leaves thinly. Remove the pits from the plums and mash them.
Cut the chicken thigh into bite-sized pieces.
Heat salad oil in a frying pan over medium heat. Add chicken pieces and cook until the color changes. Add lotus root and stir-fry for 2–3 minutes until coated with oil.
Add mashed plums and the seasonings (sake, mirin, soy sauce, dashi powder, and water). Mix well and bring to a boil. Cover and simmer on low heat for 5–6 minutes.
Uncover and cook on medium heat for 2–3 minutes until the sauce thickens. Serve on a plate and garnish with shiso leaves.
