Cut the shiitake mushrooms into quarters and separate the shimeji mushrooms by hand.

Slice the onion thinly and cut the broccoli into bite-sized pieces. Cut the chicken thigh into bite-sized pieces.

Heat salad oil in a frying pan over medium heat. Place the chicken skin-side down and cook until browned, then flip.

Add shiitake, shimeji, onion, and broccoli to the pan. Cook until softened.

Add butter to the pan and let it melt. Stir in the flour and cook until no longer powdery.
