Slice chicken breast diagonally into bite-sized pieces, season with salt and pepper, and coat with potato starch.

Heat salad oil in a pan, add grated garlic, grated ginger, and carrots. Sauté over low heat until carrots soften, then push to the side and add chicken pieces. Cook until chicken turns white.
