ÉTAPES
Cut the chicken breast in half lengthwise, then slice into bite-sized pieces at an angle. Coat the chicken pieces evenly with potato starch, shaking off excess.
Trim the spinach roots, wash thoroughly in water, and cut off the root ends.
Add the broth ingredients (dashi stock, sake, and salt) to a pot and bring to a boil. Add spinach and chicken, cooking over medium heat until the chicken is cooked through and the spinach is tender. Serve with ponzu sauce.
