Slice mozzarella cheese into 5mm thick pieces and trim the stems off the shiso leaves.

Mix the seasoning ingredients (sake, mirin, sugar, soy sauce) in a bowl.

Butterfly the chicken breasts and pound them to an even thickness. Season with salt and pepper.

Place 3 shiso leaves and half the mozzarella cheese on one side of the chicken breast. Fold the chicken over to enclose the filling, season with salt and pepper, and lightly coat with potato starch. Repeat for the second chicken breast.

Heat 1 tbsp of salad oil in a frying pan over medium heat. Place one stuffed chicken breast skin-side down and cook until golden brown. Flip, cover, and cook on low heat for 8–10 minutes until fully cooked.

Wipe excess oil with a paper towel, add half the seasoning mixture, and coat the chicken evenly. Repeat for the second chicken breast.

Slice the cooked chicken into bite-sized pieces and serve on a plate with lettuce and cherry tomatoes.
