- 🍗 200g chicken breast, skinless
- 8 shiso leaves
- 1 tbsp salad oil
Binding
- 🥚 2 egg yolks
Seasoning
- 1 tbsp mayonnaise
- 1/2 tsp chicken broth powder
- 1 tsp yuzu kosho
- 3 tbsp potato starch
- 1 tsp sake
- 🧂 1/3 tsp salt
ÉTAPES
Trim the stems off the shiso leaves.
Finely chop the chicken breast into coarse mince.
In a bowl, mix the minced chicken with the seasoning ingredients. Divide into 8 portions and shape into round patties, sandwiching each with a shiso leaf.
Heat salad oil in a frying pan over medium heat. Cook the patties for 3–4 minutes, flipping occasionally, until fully cooked.
Serve on a plate and garnish with egg yolks.
