Prepare burdock by shaving thin slices and soaking in water. Trim snap peas and remove strings. Blanch snap peas in salted boiling water for 10–20 seconds, then cool and slice diagonally.

Heat sesame oil in a pan over medium heat. Sauté chicken until partially cooked, then add burdock and stir-fry briefly. Add sake and soy sauce, cooking for 2–3 minutes. Separate the solids and liquid, letting them cool.

In a rice cooker, combine soaked rice, cooking liquid, soy sauce, and water up to the 2-cup mark. Flatten the rice and layer the cooked solids on top. Cook as usual. Once done, mix in snap peas gently.
