INGRÉDIENTS
Chicken
- 🍗 300g boneless chicken thighs
Seasoning
- 2 tbsp soy sauce
- 🧂 1 pinch salt
- 🍬 1/3 tbsp sugar
- 1 tbsp mirin
- A dash of ground pepper
- A dash of ginger powder
Batter
- 🥚 1 egg
- Enough cornstarch for coating
Cooking Oil
- Generous amount of frying oil
ÉTAPES
Trim excess fat and tendons from the chicken thighs.
Cut the chicken into bite-sized pieces and rinse under running water. Drain thoroughly.
Marinate the chicken with soy sauce, salt, sugar, mirin, pepper, and ginger powder. Mix well and refrigerate for 1 hour.
After marination, crack an egg into the chicken and mix thoroughly.
Coat the chicken pieces evenly with cornstarch by shaking them in a sealed bag.
Heat oil to 175–180°C (medium to medium-low heat). Fry the chicken pieces until golden brown. Drain and let cool slightly.
Refry the chicken at high heat for extra crispiness. Drain and serve.
