- 🍄 200g enoki mushrooms
- 🧅 1 tbsp chopped green onion

ÉTAPES
Prepare 200g enoki mushrooms and 2 eggs.
Wash the enoki mushrooms lightly, remove the base, and chop them finely into 0.5cm pieces.
In a bowl, mix the chopped enoki mushrooms with 3 tbsp potato starch, 1 tbsp soy sauce, and 6 grinds of black pepper. Then add 2 eggs and mix thoroughly to create the batter.
Add 1 tbsp of chopped green onion to the batter for added flavor.
Heat a pan with sufficient oil and spoon the batter into small round shapes.
Flip the pancakes and cook until golden brown on both sides.
Once cooked, plate the pancakes and serve with ketchup or soy sauce.
