ÉTAPES
Cut the chicken thigh into bite-sized pieces and make shallow cuts on the skin side. Halve the cherry tomatoes.
Heat salad oil in a frying pan over medium heat. Add the chicken and cook for 3 minutes until browned. Sprinkle with salt.
Add the cherry tomatoes and the seasoning ingredients (sake, mirin, shio koji). Increase to high heat and stir-fry until the liquid evaporates.
