- 200g ground chicken
Vegetables
- 🥔 1 small potato (100g), julienned
- 🧅 1/4 onion (50g), minced
Condiments
- 1 tbsp mayonnaise
- 🧂 Pinch of salt and pepper
Thickener
- 1 tbsp potato starch
Cooking Oil
- 1/2 tbsp salad oil
Seasoning Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1 tbsp miso
- 💧 1 tbsp water
ÉTAPES
Mince the onion and julienne the potato. Soak the potato in water and drain thoroughly.
In a bowl, mix ground chicken, minced onion, mayonnaise, potato starch, and salt and pepper until sticky. Add the julienned potato and mix well. Divide into 6 portions and shape into 1.5cm thick patties.
Combine sake, mirin, sugar, miso, and water in a bowl to make the seasoning sauce.
Heat salad oil in a pan over medium heat. Cook the patties for 3–4 minutes until browned. Flip, cover, and cook on low heat for 5–6 minutes until fully cooked.
Add the seasoning sauce to the pan and simmer over medium heat until thickened and the patties are well-coated.
