INGRÉDIENTS
Main Ingredients
- 🍗 300g ground chicken (thigh)
- 10 shiso leaves, minced
- 🧅 1/2 stalk green onion, minced
- 1 tbsp vegetable oil
Tsukune Mix
- 🥚 1 egg white
- 1/4 tsp grated ginger
- 1.5 tbsp potato starch
- 🧂 1/4 tsp salt
- A pinch of pepper
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 🧂 1 tbsp soy sauce
Garnish
- Chili threads, as needed
- 🥚 1 egg yolk
ÉTAPES
Mince the shiso leaves and green onion.
In a bowl, combine ground chicken, minced ingredients, and all Tsukune Mix ingredients. Mix until sticky and form into 8 equal portions.
In a separate bowl, mix all Sauce ingredients.
Heat vegetable oil in a pan over medium heat. Add the tsukune and cook until browned on both sides. Cover and steam on low heat for 3–4 minutes until fully cooked.
Add the prepared sauce to the pan and coat the tsukune while cooking.
Plate the tsukune, garnish with chili threads, and serve with egg yolk on the side.
