Rice
- 🍚 2 bowls cooked basmati rice
Seafood
- 🦐 8 whole shrimp (560g)
Vegetables
- 🧅 1/2 onion (100g)
- 🍅 1 tomato (200g)
- 🧄 2 cloves garlic
- 1 piece ginger
Liquids
- 🥥 400ml coconut milk
- 2 tbsp salad oil
Seasonings
- 🧂 2/3 tsp salt
- 🌿 10g cilantro
Whole Spices
- 1 tsp mustard seeds
- 1 green chili
- 3 curry leaves
Powdered Spices
- 2 tsp cumin powder
- 2 tsp turmeric powder
- 1 tsp coriander powder
- 1/4 tsp chili powder
ÉTAPES
Prepare the shrimp by removing the shells and heads, reserving the heads for stock.
Heat salad oil in a pan and add mustard seeds, green chili, and curry leaves.
Add chopped onion, garlic, and ginger to the pan and sauté until softened.
Add chopped tomato and cook until it breaks down into a paste.
Mix in powdered spices (cumin, turmeric, coriander, chili powder) and stir well.
Pour in coconut milk and simmer for 10 minutes.
Add shrimp and cook for 5-7 minutes until fully cooked.
Season with salt and garnish with cilantro before serving.
