INGRÉDIENTS
Noodles
- 150g somen noodles
Protein
- 🥚 2 eggs
- 25g cod roe
Vegetables
- 🧅 Chopped green onion, as needed
Seasoning
- 1 tbsp sake
- 1/2 tbsp mirin
- 1 1/2 tbsp soy sauce
- 1/3 tsp dashi powder
- 💧 500ml water
Thickener
- 2 tsp potato starch
- 💧 2 tbsp water
ÉTAPES
Cut the cod roe and extract the contents.
Crack the eggs into a bowl and mix well.
In a pot, combine the seasoning ingredients and heat until boiling. Reduce to medium heat and add the potato starch mixture to thicken.
Pour the beaten eggs into the pot and gently stir with chopsticks. Turn off the heat and let cool. Refrigerate for 30 minutes.
Boil water in a pot, cook the somen noodles according to package instructions, then rinse with cold water and drain.
Plate the somen noodles, pour the chilled egg soup over, garnish with green onions, and top with cod roe.
