- 1/2 bunch mitsuba
- 3 cm daikon
Seafood
- 6 slices smoked salmon
Seasoning
- 🍬 2 tsp sugar
- 🧂 1/4 tsp salt
- 2 tbsp vinegar
- 💧 2 tbsp water
ÉTAPES
Boil water in a pot, blanch the mitsuba briefly, then rinse under cold water. Drain and cut off the root ends.
Mix the ingredients for the sweet vinegar (☆) in a bowl.
Slice the daikon thinly. Sprinkle with 1/2 tsp salt (not listed in ingredients), let sit for 5 minutes until softened, rinse with water, and drain. Soak in the sweet vinegar mixture for 30 minutes, then drain.
Layer two daikon slices, place smoked salmon on top, roll them up, and tie with a piece of mitsuba.
