INGRÉDIENTS
Noodles
- 1 pack udon noodles
Meat
- 100g ground meat
Vegetables
- 3 stalks green onion
- 1 tbsp pickled ginger
Binders
- 1 tbsp breadcrumbs
- 1 tbsp water
Seasonings
- 🧂 Pinch of salt
- 1/2 tbsp salad oil
Sauce Ingredients
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 1/2 tbsp sugar
- 1 tbsp soy sauce
- 150cc water
Daruma Decoration
- 🥚 1 boiled egg
- 4 tbsp pickled ginger juice
- Seaweed as needed
- Ketchup as needed
- 2 black sesame seeds
Thickener
- 1/2 tbsp cornstarch
- 1/2 tbsp water
ÉTAPES
Slice green onions thinly and chop pickled ginger.
Place pickled ginger juice and boiled egg in a storage bag and refrigerate for 15 minutes.
Combine breadcrumbs and water in a bowl and let sit for 5 minutes. Add ground meat, green onions, pickled ginger, and salt. Mix until sticky and shape into oval patties with a dent in the center.
Heat salad oil in a frying pan and cook patties on medium heat until browned. Flip, add sauce ingredients, cover, and simmer for 5 minutes.
Add udon noodles and simmer for 1 minute. Thicken with cornstarch mixture.
Cut the bottom of the egg and trim the top half to create the Daruma face. Attach seaweed for facial features, use ketchup for cheeks, and black sesame seeds for eyes.
Place the Daruma decoration and garnish with green onions on the simmered udon.
