Fish
- 🐟 200g mōkasame fillets
Coating
- 3 tbsp potato starch
- Enough salad oil for frying
Marinade
- 1 tbsp sake
- 1/2 tbsp soy sauce
- 🧄 1/2 tsp grated garlic
- 1/2 tsp grated ginger
Aromatic Sauce
- 🧅 1/2 stalk minced green onion
- 🍬 1/2 tsp sugar
- 1 tbsp vinegar
- 1 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1 tsp grated ginger
ÉTAPES
Mince the green onion and mix all aromatic sauce ingredients in a bowl.
Pat the mōkasame fillets dry with paper towels and cut them into bite-sized pieces.
Mix marinade ingredients in a separate bowl, add the mōkasame pieces, and massage gently. Let sit for 10 minutes.
Coat the marinated fish pieces evenly with potato starch.
Heat salad oil in a pot to 170°C (340°F). Fry the fish pieces for about 3 minutes, flipping occasionally, until golden brown.
Plate the fried fish and serve with the aromatic sauce on the side.
