INGRÉDIENTS
Vegetables
- 300g boiled siraegi
- 🧅 1/2 onion, sliced
- 1 stalk chopped green onion
- 2 green chilies
- 1-2 red chilies
Condiments
- 3 tbsp doenjang
- 1 tbsp gochujang
- 2 tbsp soy sauce
- 🍬 1 tsp sugar
- Pinch of black pepper
- 1/2 tbsp gochugaru
Oils and Powders
- 6 tbsp perilla powder
- 2 tbsp perilla oil
Liquid
- 3L rice water
Spices
- 🧄 1 tbsp minced garlic
ÉTAPES
Prepare the ingredients. Cut boiled siraegi into 5cm pieces, slice the onion, and chop the green onion finely.
Mix siraegi, onion, garlic, green onion, doenjang, gochujang, soy sauce, sugar, and 5 tbsp perilla powder in a bowl.
Heat a pot with 2 tbsp perilla oil, add the mixed siraegi, and stir-fry with 1 cup rice water or broth.
Add the remaining rice water or broth to the pot and bring to a boil. Reduce to medium-low heat and simmer until siraegi becomes tender.
Add sliced red chilies and adjust seasoning with salt. Simmer until the soup thickens.
Serve the soup hot, garnished with additional perilla powder and gochugaru if desired.
