Main Ingredients
- 🐟 120g sashimi-grade yellowtail
- 🧈 150g silken tofu
- 🧅 1/2 stalk green onion
- 🍄 100g enoki mushrooms
- 🌱 2 slices ginger
Broth Base
- 6cm dried kombu
- 💧 500ml water
- 2 tbsp sake
- 🧂 1 pinch salt
Ponzu Sauce
- 3 tbsp ponzu soy sauce
- 1 tbsp sesame oil
- 1 tsp white sesame seeds
ÉTAPES
Cut tofu into bite-sized pieces. Slice green onion diagonally, leaving 10cm for mincing. Trim and separate enoki mushrooms.
Mix minced green onion with ponzu soy sauce, sesame oil, and white sesame seeds in a bowl to prepare the dipping sauce.
Heat water and kombu in a pot over medium heat. Remove kombu before boiling. Add sake, salt, ginger, tofu, enoki mushrooms, and sliced green onion. Cover and simmer on low heat for 5 minutes.
Serve yellowtail slices on a plate. Dip them briefly into the hot broth before eating.
