INGRÉDIENTS
Meat
- 8 slices pork belly
Vegetables
- 茄子 1 medium eggplant (80g), sliced
- 8 shishito peppers
Seasoning
- 1/2 tbsp potato starch
- 1 tsp salad oil
- 🧈 10g salted butter
- 1 1/2 tbsp ponzu sauce
ÉTAPES
Cut the eggplant into 8 vertical slices and trim the ends of the shishito peppers. Make a slit in each pepper.
Spread the pork belly slices, dust with potato starch, and wrap each slice around 1/8 of the eggplant and shishito peppers. Repeat to make 8 rolls.
Heat salad oil in a pan over medium heat. Place the rolls seam-side down and cook for 2 minutes until browned. Cover and steam for another 2 minutes. Remove excess oil with a paper towel.
Add butter and ponzu sauce to the pan. Cook over medium-high heat, turning the rolls until the sauce thickens and coats them evenly.
