Vegetables
- 🍆 2 eggplants
- 🍅 1 tomato
Seasonings
- 🧄 1/2 tsp grated garlic
- 🧂 Pinch of salt and pepper
Oils
- 1 tbsp olive oil
Dairy
- 🧀 30g pizza cheese
Herbs
- Chopped parsley, as needed
ÉTAPES
Slice the eggplants into 5mm thick pieces and soak them in water. Drain the water.
Cut the tomato in half and slice thinly.
Heat olive oil in a frying pan, add eggplants and grated garlic, and sauté over medium heat until softened. Season with salt and pepper.
Lightly grease a heatproof dish with salad oil (not listed in ingredients), arrange the eggplants and tomatoes, and top with pizza cheese.
Bake in a toaster oven for about 5 minutes until the cheese is golden brown. Sprinkle parsley on top.
