- 🍆 2 eggplants
- 🧅 1/2 onion
- 1/2 yellow paprika
- 1/2 red paprika
Condiments
- 200g spaghetti sauce
- 🧂 1 tsp herbal salt
- 2 tbsp olive oil
Cheese
- 🧀 6 tbsp pizza cheese
- 🧀 1 tbsp parmesan cheese
ÉTAPES
Cut the eggplants in half and scoop out the flesh using a knife or spoon.
Brush the eggplant shells with olive oil and season with herbal salt.
Bake the eggplants in a preheated oven at 200°C (392°F) for 15 minutes.
Dice the scooped-out eggplant flesh, onion, yellow paprika, and red paprika.
Heat olive oil in a pan and sauté the diced vegetables until softened.
Add spaghetti sauce to the pan and mix well with the vegetables.
Fill the baked eggplant shells with the vegetable mixture.
Top with pizza cheese and sprinkle parmesan cheese and parsley.
Bake in the oven for an additional 5 minutes at 200°C (392°F).
