Hollandaise Sauce Ingredients
- 🥚 2 egg yolks
- 🧈 80g unsalted butter
- 🍋 1 tbsp lemon juice
- 🧂 A pinch of salt
- A pinch of pepper
Main Ingredients
- 🍞 1 English muffin
- 🥓 4 slices of bacon
- 🥚 2 eggs
- 🥬 2 handfuls of baby greens
- 🍶 1 tbsp vinegar
- 🍶 1 tbsp mayonnaise
- 🌾 1 tbsp wholegrain mustard
ÉTAPES
Melt the butter completely in the microwave in 30-second intervals.
Place a bowl over a pot of simmering water and whisk the egg yolks.
Gradually add the melted butter to the yolks while whisking continuously.
Season the sauce with lemon juice, salt, and pepper. Keep the sauce warm.
Toast the English muffin halves in a buttered pan.
Cook the bacon slices until crispy.
Bring water to a boil, add vinegar, and create a whirlpool before poaching the eggs.
Spread mayonnaise and wholegrain mustard on the toasted muffin halves.
Layer the bacon, baby greens, and poached eggs on the muffins.
Top with Hollandaise sauce and serve immediately.
