INGRÉDIENTS
Seasoning
- 1 tbsp sake
- 2 tbsp sweet chili sauce
- 🧂 1/3 tsp salt
Breading
- 1 cup breadcrumbs
- Salad oil as needed
Garnish
- 1/2 bunch cilantro
- 🍋 1/4 lemon wedge
Filling
- 🍤 200g peeled shrimp
- 🥑 1/2 avocado
- 🥚 1/2 beaten egg
- 2 tbsp potato starch
ÉTAPES
Cut avocado into 1cm cubes and chop cilantro into 3cm pieces.
Remove shrimp veins, rinse under water, and marinate with sake for 5 minutes. Pat dry with paper towels.
Mix shrimp (half chopped, half mashed) with egg, potato starch, and salt until sticky. Add avocado and mix gently.
Shape the mixture into bite-sized balls and coat with breadcrumbs. Make 6 pieces.
Heat salad oil to 170°C and deep-fry the cutlets until golden brown.
Plate the cutlets, drizzle with sweet chili sauce, and garnish with cilantro and lemon wedges.
