INGRÉDIENTS
Noodles
- 2 frozen udon noodles
Protein
- 🍗 2 chicken tenderloins, trimmed
Vegetables
- 🥒 1 cucumber
- 🍆 1 eggplant
- 1 myoga
- 1/2 bunch mitsuba
Seasoning
- 100cc concentrated mentsuyu
- 2 tbsp fish sauce
- 🍋 1 tbsp lemon juice
- 🧂 1/2 tbsp sugar
- 💧 50cc water
- 1 tsp sliced chili
- 1 tbsp sesame oil
ÉTAPES
Cut cucumber and eggplant into 1cm cubes, sprinkle with a pinch of salt, massage, and drain. Chop myoga finely and cut mitsuba into 3cm lengths.
Make small cuts in chicken tenderloins, place them in a microwave-safe container, sprinkle with 1 tbsp sake, cover with plastic wrap, and microwave at 600W for 2 minutes 30 seconds. Shred into bite-sized pieces once cooled.
Mix all seasoning ingredients in a bowl and marinate cucumber, eggplant, and myoga.
Cook udon noodles according to package instructions, rinse under cold water, and drain. Serve noodles in a bowl, top with marinated vegetables, chicken, and mitsuba, then pour the marinade over.
