    • 1 1/2 tbsp mirin
    • 💧 250ml water
    • 1/2 tbsp sake
    • 🧂 1 1/2 tbsp soy sauce

Cut the daikon radish into 4cm pieces, grate some to make grated daikon, and lightly squeeze out excess water. Slice the remaining daikon into 1.5cm half-moon pieces.

In a pot, combine all sauce ingredients except soy sauce, add the daikon slices, and bring to a boil over medium heat. Cover and simmer for 7–8 minutes on low heat until tender. Add soy sauce and simmer for another 5 minutes.

Cut the chicken thigh into bite-sized pieces, season with salt and pepper, and coat evenly with potato starch.

Heat vegetable oil in a frying pan to 180°C (2cm depth) and fry the chicken pieces for 4–5 minutes until cooked through and crispy.

Add the fried chicken to the pot with the daikon and sauce, and gently mix.

Serve in a dish, top with grated daikon, drizzle with remaining sauce, and garnish with chopped green onion.
