INGRÉDIENTS
Fish
- 🐟 2 filleted horse mackerels (140g)
Vegetables
- 🍄 100g enoki mushrooms
- 🥕 50g carrot, julienned
- 30g green pepper, julienned
Seasoning
- 🧂 Pinch of salt and pepper
- Cornstarch as needed
- Salad oil as needed
- 1 tsp sesame oil
Sauce
- 1 tbsp sake
- 🍬 1 tsp sugar
- 1 tbsp soy sauce
- 1/2 tsp chicken stock powder
- 1 tsp grated ginger
- 💧 150ml water
Thickener
- 1 tbsp cornstarch
- 💧 1 tbsp water
ÉTAPES
Prepare the vegetables: cut enoki mushrooms into halves and separate them, julienne the carrot and green pepper.
Pat the horse mackerel dry with paper towels, season with salt and pepper, and coat evenly with cornstarch.
Heat 2cm of salad oil in a pot to 170°C, fry the mackerel for 2 minutes on one side, flip, and fry until golden brown for another 2–3 minutes.
In a pan, heat sesame oil over medium heat, stir-fry the vegetables until coated with oil, then add the sauce ingredients and simmer for 2 minutes. Add the cornstarch-water mixture and stir until thickened.
Plate the fried mackerel and pour the Chinese sauce over it.
