- 1/2 tsp grated ginger
- 1 tbsp soy sauce
- 1/2 tbsp mirin
ÉTAPES
Remove the guts and tentacles from the squid's body. Take out the cartilage from the body. Cut off the eyes and mouth from the tentacles, and trim the tips. Wash the body and tentacles, then cut the body into 1cm wide strips and divide the tentacles into pairs.
Place the squid and the seasoning ingredients (grated ginger, soy sauce, mirin) into a bag. Massage the mixture into the squid and let it marinate in the refrigerator for 20 minutes.
Coat the squid pieces with potato starch. Heat salad oil in a pot to 170°C and fry the squid, flipping occasionally, until cooked through.
