Vegetables
- 🧅 1 stalk scallion, chopped
- 🧄 5 cloves garlic, sliced
- 🧄 1 tbsp minced garlic
Eggs
- 🥚 2 eggs
Grains
- 🍚 1 bowl cooked rice
Condiments
- 🧂 1 tbsp soy sauce
- 1/2 tbsp oyster sauce
Oils
- Adequate amount of cooking oil
ÉTAPES
Chop the scallion into small pieces and slice the garlic cloves.
Heat a generous amount of cooking oil in a frying pan over high heat.
Add the chopped scallion, sliced garlic, and 1 tbsp of minced garlic to the pan. Stir-fry on high heat to create a fragrant scallion-garlic oil.
Push the scallion and garlic to one side of the pan. Crack 2 eggs into the empty space and scramble them.
Once the scrambled eggs are cooked, push them to the side of the pan as well.
Pour 1 tbsp of soy sauce into the hottest part of the pan and let it reduce until it darkens.
Mix the reduced soy sauce with the eggs and scallion-garlic mixture.
Add 1 bowl of cooked rice and 1/2 tbsp of oyster sauce to the pan. Stir-fry everything together until well combined.
