- 🦪 8 oysters (120g)
Vegetables
- 1 bunch (200g) komatsuna
- 🧄 1 clove garlic
Cooking Oil
- 1 tbsp sesame oil
Oyster Preparation
- 1 tbsp potato starch
- 1 tbsp sake
Seasoning
- 1 tbsp sake
- 1 tbsp mirin
- 1 tbsp soy sauce
- A pinch of black pepper
ÉTAPES
Wash the roots of komatsuna, cut into bite-sized pieces, and slice the garlic thinly, removing its core.
Mix oysters with potato starch in a bowl, add water to cover, and gently wash until the water runs clear. Drain and pat dry with a paper towel.
Heat sesame oil and garlic in a frying pan over low heat until fragrant. Add oysters and stir-fry quickly over medium heat. Add sake, cover, and steam for 3 minutes over low heat.
Add komatsuna to the pan and stir-fry until softened. Add the seasoning mixture and stir to combine.
