INGRÉDIENTS
Pasta
- 🍝 200g spaghetti
Vegetables
- 🥔 1 potato (120g), peeled and diced
- 8 green beans, trimmed
Cheese
- 🧀 Grated Parmesan cheese, as needed
Genovese Sauce
- 🌿 50g fresh basil leaves
- 🧄 1 clove garlic, halved and peeled
- 🌰 30g pine nuts
- 🧀 2 tbsp grated Parmesan cheese
- 🧂 1/3 tsp salt
- Pinch of black pepper
- 100ml olive oil
ÉTAPES
Peel and dice the potato into 1cm cubes, soak in water for 3 minutes, then drain. Trim the green beans into bite-sized pieces.
Remove stems from basil leaves and halve the garlic clove, removing its germ.
Toast the pine nuts in a pan until fragrant.
Blend all Genovese sauce ingredients in a food processor until smooth.
Boil spaghetti according to package instructions. Add the potato and green beans 2 minutes before the pasta finishes cooking. Reserve 2–3 ladles of pasta water before draining.
Mix the cooked pasta, potato, green beans, and Genovese sauce in a bowl. Add reserved pasta water if needed. Serve with grated Parmesan cheese.
