Main Ingredients
- 170g luncheon meat (1/2 can)
- 🥔 2 potatoes, peeled and sliced
- 1/2 red bell pepper, diced
- 🧅 1/4 onion, thinly sliced
Seasonings
- 2 tbsp mayonnaise
- 1 tbsp whole grain mustard
- 🧄 1/3 tsp grated garlic
- 🧂 1/4 tsp salt
- A pinch of black pepper
ÉTAPES
Peel and slice the potatoes into 1cm pieces. Soak them in water for 2 minutes, then drain. Place in a bowl, cover with plastic wrap, and microwave at 600W for 3 minutes until softened.
Cut the luncheon meat and red bell pepper into bite-sized pieces. Thinly slice the onion.
Heat mayonnaise in a frying pan over medium heat. Add the potatoes, luncheon meat, red bell pepper, and onion. Stir-fry until everything is cooked through.
Add the seasonings (mustard, garlic, salt, and pepper) and stir to combine.
