- 🐟 4 sardines, gutted
Vegetables
- 4 shiso leaves
Staples
- 1 tbsp potato starch
- 1 tbsp salad oil
- White sesame seeds, as needed
Sauce
- 1 tbsp sake
- 1 tbsp mirin
- 🍬 2 tsp sugar
- 2 tbsp soy sauce
- 1 tsp grated ginger
ÉTAPES
Thinly slice the shiso leaves.
Butterfly the sardines, remove the belly bones, and pat dry with paper towels. Coat them with potato starch.
Heat salad oil in a frying pan over medium heat. Place the sardines skin-side down and cook until golden brown. Flip and cook until fully done.
Add the sauce ingredients to the pan and coat the sardines evenly. Serve on a plate, topped with shiso leaves and white sesame seeds.
