INGRÉDIENTS
Vegetable
- 1/2 stick (100g) burdock root
- 🧅 1 green onion
Meat
- 🥩 150g sliced beef
Egg
- 🥚 2 beaten eggs
Condiment
- 30cc concentrated men-tsuyu
- 💧 100cc water
ÉTAPES
Thinly slice the burdock root using the tip of a knife (sasagaki style). Soak in water and drain. Cut the green onion diagonally into 1cm slices.
Heat a pot with men-tsuyu and water. Once boiling, add burdock root and green onion. Cover and simmer on low heat for 2-3 minutes.
Add the beef and cook on medium heat for 3 minutes until the beef changes color.
Pour the beaten eggs evenly over the mixture. Cover and cook on low heat for 1 minute, then turn off the heat and let it sit covered for 1 minute using residual heat.
