- 🍗 300g chicken thigh
Vegetables
- 🧅 100g sliced onion
- 🥬 600g chopped cabbage
- 🍠 180g sliced sweet potato
- 🥔 150g sliced potato
- 🥕 150g sliced carrot
- 🍄 100g shimeji mushrooms
- 🧄 2 cloves sliced garlic
Cooking Oil
- 1 tbsp olive oil
Soup Base
- 750g goma soy milk soup base
- 🥛 400ml milk
- 💧 200ml water
Other Ingredients
- 🧀 100g shredded pizza cheese
- Black pepper to taste
ÉTAPES
Slice the onion, chop the cabbage, and cut sweet potato and potato into 1cm slices. Soak the sweet potato and potato in water, then drain. Microwave the sweet potato and potato for 5-6 minutes at 600W. Peel and slice the carrot thinly using a peeler. Trim and separate the shimeji mushrooms. Slice garlic and remove the core.
Cut the chicken into bite-sized pieces.
Heat olive oil and garlic in a pot over low heat. Once fragrant, add chicken and cook on medium heat until browned on both sides. Remove the chicken from the pot.
Add the soup base ingredients (soy milk soup, milk, and water) to the same pot and bring to a boil. Add vegetables, mushrooms, and chicken. Cover and simmer on low heat until cooked through. Add shredded cheese, cover, and heat until melted. Sprinkle black pepper to taste.
