INGRÉDIENTS
Seafood
- 🦐 200g peeled shrimp
Vegetables
- 1 medium-sized goya (250g), sliced
Dry Ingredients
- 1 tbsp all-purpose flour
- 🧂 1/2 tsp salt
Liquid Ingredients
- 💧 300cc water
- Enough vegetable oil for deep-frying
Batter
- 🥚 1 egg yolk
- 3 tbsp all-purpose flour
- 3 tbsp potato starch
- 💧 4 tbsp water
ÉTAPES
Remove the vein from the peeled shrimp, rinse with water, pat dry with paper towels, and cut into 1cm cubes.
Cut the goya in half lengthwise, remove seeds and pith, and slice thinly. Soak in a bowl of water mixed with salt for 15 minutes, then drain.
Add the shrimp and 1 tbsp of flour to the drained goya and mix until evenly coated.
In a separate bowl, mix the batter ingredients (egg yolk, flour, potato starch, and water) until smooth. Add the coated shrimp and goya mixture and gently combine.
Heat vegetable oil in a pot to 170°C (340°F). Using a spoon, scoop the mixture into bite-sized portions and fry for 3–4 minutes until crispy.
